Summer Veggies

More than winter, spring, or fall, I would have to say that vegetables grown in the summer are my favorite. Squash, eggplant (to which only recently my taste buds have accepted), bell peppers, and corn: you can make so much out of these simple ingredients. This slideshow showed up on my Twitter timeline this morning, and the recipes are too good not to share. Personally, I can’t wait to try the Baby Eggplant, Olive, and Herb-Cheese Frittata.
